Recording piano's to represent the quality of a great piano and player is different every time. I have seen that some studios / engineers have a one way method that they use to capture the sound.
I have found that the piano which is really a percussion instrument sounds different with every player. It really depends on the style and how the player strikes the keys of the instrument. One player seems to play in such a way that the sound is brighter or darker.
